Chilly temperatures call for savory, robust piatti. In this series of hands-on/demo Italian cooking classes with Paulette Licitra, we’ll cook classic comforting dishes from the many regions of Italy.

Wednesday, January 20th 6:30-9pm   Italian Soups

To warm the cold winter evenings, these soups bring the taste of Italy simmering in your kitchen.

  • Pappa al Pomodoro (Tuscan Tomato & Bread Soup)
  • Risi e Bisi in Brodo (Venetian Rice & Peas in Broth)
  • Stracciatella (Roman Egg Soup)
  • Vellutata di Asparagi (Creamy Asparagus Soup-Veneto)

Wednesday, February 3rd 6:30-9pm  Quick Pasta Sauces from Four Regions

In less than an hour these savory flavor-popping pastas are ready to feast upon.

  • Spaghetti Carbonara (Lazio)
  • Linguine Puttanesca (Campania)
  • Strozzapreti alla Vongole (Campania)
  • Orchiette w/ Broccoli rabe & Sausage (Calabria)

Wednesday, March 3rd 6:30-9pm  Seafood Favorites

The taste of the Mediterranean in every dish!

  • Stuffed Calamari (Campania)
  • Scampi Linguine (Campania)
  • Tilapia al Cartoccio (Puglia)

Wednesday, March 17th 6:30-9pm  Pasta Ripieni Two Ways

We’ll make fresh pasta and create these two authentic regional filled-pastas with sauces that you rarely see this side of the Atlantic.

  • Pansoti in Salsa Noci (Liguria) (wild greens stuffed pasta in walnut pesto sauce)
  • Tortelli di Zucca in Funghi Ragu (Lombardia) (“candy wrapper” pasta stuffed with butternut squash in a savory mushroom-thyme ragu)

Wednesday, March 31st 6:30-9pm  Robust Italian Carne Piatti

Three Classics from Three Regions

  • Osso Buco with gremolata (Lombardia) Veal shanks braised w/lemon-parsley-garlic
  • Saltimbocca alla Romana (Lazio) Veal scallops w/sage & prosciutto
  • Steak Pizzaiola (Campania) Tender steak in a tomato-garlic-oregano sauce

Classes are $40 each. Discount for entire 5-class series: $180.

You’ll take away a full packet of the recipes from the evening, and a complimentary copy of Alimentum-The Literature of Food.
